A startup making butter without milk A California-based company called Savor, supported by Bill Gates, says it has created butter without using any dairy at all. Instead of milk, the company uses carbon dioxide from the air. Through a special thermochemical process, they turn it into fats that look, feel, and taste like real butter. How the process works Savor combines carbon dioxide with hydrogen and oxygen and applies heat to build fat molecules similar to those found in dairy products. This method avoids the need for: In simple terms, the company starts with carbon dioxide and transforms it into the same types of fats people already enjoy in everyday foods. A big win for the environment Traditional butter production creates a large amount of greenhouse gases. According to Bill Gates, the world releases about 51 billion tons of greenhouse gases each year and fats and oils from plants and animals make up around 7% of that. Savor’s butter has a carbon footprint of less than 0.8 grams of CO₂ per kilogram, compared to 16.9 kilograms for regular butter. That’s a huge difference and could help fight climate change. Not in stores yet Even though the results are promising, Savor’s butter is not available for sale yet. The company is still waiting for regulatory approval before launching it in the market. If approved, this carbon-based butter could become a cleaner and more sustainable alternative to traditional dairy without changing the taste people love.
