Not Lower Parel or Bandra! There is a new taproom for craft beers in this suburb

[[{“value”:”

Amid Mumbai’s growing experiments with food and drink, the city’s beer lovers have a new place to sip on craft beers called Madwater Brewery, and it is neither in Bandra nor in Lower Parel or elsewhere in Mumbai, but in Dadar, close to the railway station in Ruby Tower.

The 10,000 sq. ft. brewery and taproom is built with a sustainability-led approach to design and materials, brings together in-house brewing, a Michelin Guide executive chef Gurudatt Sawant, who leads the kitchen and Bombay-inspired decor.

Know about the founders

Founded by Raj Rai and Abhijit Rao, the brewery and taproom led through two complementary sides of the business. Raj Rai, founder & CEO, Madwater Brewery – Microbreweries & Taprooms, brings a background in hospitality and leads the microbrewery and taproom business, shaping the guest experience, spaces and the wider evolution of the brand. Abhijit Rao, Founder & CEO, Madwater Brewery – Brewing & Retail, comes from a brewing background and leads brewing and retail, including the craft brewery at Nashik. Together, they bring hospitality and brewing expertise, and hope to celebrate craft beers in a city that loves to party. Their philosophy is captured in Madwater’s emblem, curated in collaboration with Studio Bigfat: a skull-shaped chalice flanked by an M and a W, sealed with the words “ESTD NOW”.

What’s on the food and drink menu?

Madwater’s in-house range spans about 15 beers, brewed on-site at the Dadar brewery, with an ABV running from 2.8 per cent to 6.5 per cent. At one end sits Low Cal beer and the other, Cask No. 9, the Whiskey Ale. Developing the brewhouse is Sven Kerstens, who is the technical director, bringing years of Belgian brewing from Antwerp, and is working alongside head brewer Rahul Pawar on brewing technique, process, fermentation and consistency.

The menu also includes Dark Ritual, a stout known for its roasted, coffee-like depth and creamy, nitrogenated mouthfeel, carrying notes of dark chocolate and specially used Belgian cocoa nibs, and No Non-sense Pils, a crisp, golden pale lager in the Pilsner Urquell tradition. For those who love bold flavours, there’s Smoke Break, brewed with a specially sourced beechwood smoked malt that carries real notes of bacon, barbecue and campfire. Amid the healthy drinking trend, the taproom is also catering to those who want to drink low-calorie brews with the Low Cal, it is a beer at 2.8 per cent ABV that still delivers a full beer-drinking experience. The brewhouse will also soon become accessible to diners with the experience called ‘Brew Your Own Beer’ (BYOB) set to launch in the second phase. The programme will give homebrewers and curious beer drinkers the opportunity to get closer to the brewing process and create a beer of their own

Till then, even as there are many different types of craft beers to choose from, the food menu celebrates a wide variety of dishes. Catch of the Tap sees fish battered in Madwater Brewery’s own beer and served with chips, while the Founders’ Pick — Buttermilk Fried Chicken Burger layers crisp fried chicken with a special duck sauce and gochujang mayo. Mad Fried Chicken arrives with peanut sauce, while the robata grill serves up tare-glazed Tokyo Tap Yakitori and Belly of the Beast, pork belly lacquered in sweet soy and balanced with pickled apple. The New York Style Pizzas, made with a 48-hour hydrated dough, include the Picante Pepperoni as a key highlight. The menu moves from Nawabi Galouti and Rajma Royale to pastas, Mapo Mayhem and Biryani Barrel. For dessert, Tiramisu layers mascarpone cream, savoiardi ladyfingers and espresso, while Jamun Meets Custard pairs caramelised gulab jamun with rich vanilla custard.
